The State of Ukraine's Vegetable Market
Ukraine's vegetable market is experiencing a period of extreme price volatility. The cost of table beets and onions has collapsed, while greenhouse tomatoes have become significantly more expensive. Compared to March 2025, the average price for table beets has plunged by 91%, indicating a major slowdown in trade for vegetables commonly used in traditional dishes like borscht. Sales of beets have dropped considerably, with prices offered in the range of 3–8 UAH/kg, which is 19% cheaper than at the end of the previous work week.
Furthermore, the Ukrainian market is seeing another wave of falling prices for onions. In stark contrast, greenhouse tomatoes have undergone a substantial price increase due to a market shortage and a reduction in imports, particularly from Turkey. By the end of the week, tomato prices reached 120-140 UAH per kilogram, roughly 10% higher than before.
Early Vegetable Harvest Begins
In the village of Zarichchia, Zakarpattia Oblast, farmers have started harvesting early vegetables. Early radish varieties mature in 25-28 days, whereas in winter the ripening period can extend to 70-80 days. Currently, radish prices are holding steady at 105-120 hryvnias per kilogram or about 25-27 hryvnias per bunch.
These developments highlight significant price fluctuations on the Ukrainian vegetable market, impacting both consumer demand and supply. The price drops for beets and onions are likely linked to a market surplus, while the rising cost of tomatoes points to a shortage of this product. Farmers beginning their early harvest may be able to offset some losses from falling prices on other vegetables if demand for radishes remains stable. This underscores the critical role of seasonality in shaping price trends within Ukraine's agricultural sector.
