The most potent compounds identified were polyphenols, particularly caffeic acid, rather than caffeine, highlighting the importance of coffee components beyond its stimulating effects.
Researchers at Texas A&M University conducted experiments to understand how coffee compounds interact with the NR4A1 receptor. This receptor governs gene activity in response to stress or cell injury. When scientists removed NR4A1 from cells in laboratory models, the protective effects of the coffee compounds disappeared, indicating that the receptor is essential for coffee's positive impact on cells.
