Smidyn Cabbage: A Culinary Tradition from Volyn

Television host and Ukrainian culinary expert Konstantin Grubich has brought attention to Smidyn Cabbage, a cherished traditional dish from the Volyn region that holds a place on the intangible cultural heritage list of the Smidyn community. Passed down through generations, this recipe represents more than a meal—it is a vital symbol of local cultural identity.

How Smidyn Cabbage is Made

The preparation of Smidyn Cabbage is a lengthy and meticulous process that requires special care. Traditionally, the cabbage is slow-cooked in a Polissya-style oven for at least ten hours. Before cooking begins, the hostess offers a prayer, underscoring the dish's cultural and spiritual importance. The oven is then sealed with clay and sand to ensure prolonged simmering. Grubich emphasized,

“Smidyn Cabbage is officially recognized as part of the community’s intangible cultural heritage.”

The recipe itself uses simple yet essential ingredients:

  • cabbage
  • 2 pickled cucumbers
  • 2 cloves of garlic
  • 2 tablespoons of oil
  • salt and pepper to taste

These ingredients can even be shipped via Nova Poshta. Additionally, Serhiy Pozdyshev from the Kovel district recommends adding finely chopped onions to enhance the flavor.

The preparation follows a specific method. First, a shallow pan is used. The cabbage is cut into large pieces, then combined with chopped pickles, peeled garlic, and the optional onions. The mixture is seasoned with oil, salt, and pepper before being ready to serve. Grubich noted,

“And then... the moment arrives that justifies the entire process.”

Concluding his remarks, Grubich expressed gratitude to the Smidyn community for sharing this culinary gem:
