Smidyn Cabbage: A Culinary Heritage of Volyn

Konstantin Hrubych, a Kyiv-based TV host and expert on Ukrainian cuisine, recently shared his experience with Smidyn cabbage, a traditional dish from Volyn that holds a special place as an intangible cultural heritage of the Smidyn community. Hrubych received the dish by mail from Oksana Petruk, a community member who sent it via Nova Poshta, allowing him to sample this authentic delicacy. The cabbage is prepared using a unique method in a Polissya-style oven, where it is slowly simmered for no less than ten hours.

The preparation begins with a prayer from the cook. During cooking, the oven door is sealed tightly with a mixture of clay and sand to lock in the flavors. The recipe relies on a handful of simple ingredients:

  • cabbage
  • two pickled cucumbers
  • two garlic cloves
  • two tablespoons of oil
  • salt and pepper to taste

All these ingredients were included in the parcel, enabling Hrubych to recreate the dish following the traditional method.

Insights and Serving Suggestions

Serhiy Pozdyshev, originally from the Kovel district, recommends chopping the cabbage into large cubes and mixing it with salted cucumbers, peeled garlic, and finely chopped onions, then seasoning with oil, salt, and pepper. He notes that the dish can also be enjoyed without cucumbers.

Reflecting on his tasting, Hrubych remarked, “Because life—it’s stubborn.”

He also expressed his surprise at discovering the cultural weight of Smidyn cabbage: “Honestly, I hadn’t heard of it before. But it turns out this is more than just a local dish. Smidyn cabbage is officially recognized as part of the community’s intangible cultural heritage. And the way it’s prepared makes your mouth water just from the description.”

Hrubych emphasized the importance of such traditions, especially during challenging times: “I thought again—this is our life. Somewhere there’s anxiety, explosions, fires, destroyed homes. Yet here in Volyn, people preserve the recipe their ancestors used to slow-cook cabbage in the oven, passing it on even to strangers. They share not just food, but their memories, traditions, and a piece of home. This is a quiet form of resilience—not loud or ostentatious, which is how I like it.”

To conclude, Konstantin Hrubych expressed his gratitude to the Smidyn community for sending a warm and delicious greeting from Volyn, highlighting the vital role traditional dishes play in Ukraine’s cultural heritage.
