Probiotic potential
Probiotics are live microorganisms thought to benefit the digestive system when taken in adequate amounts. With that in mind, a team from the University of Reading set out to examine whether artisan cheeses might harbor such bacteria. The researchers analyzed three British cheeses from Oxfordshire and identified microbes with potential probiotic traits.
All three cheeses — a soft cheese with a white rind, a semi-soft washed-rind cheese, and a semi-hard cheese matured in hay for about nine months — contained Lactococcus lactis at every stage of ripening. Streptococcus thermophilus was the dominant strain in the semi-soft and semi-hard samples, while Propionibacterium freudenreichii turned up in two of the cheeses.
Propionibacterium freudenreichii generates propionic acid, which earlier research has linked to lower inflammation, better cholesterol regulation, and appetite control. The mold Penicillium candidum on the soft cheese's rind produces chitin, a dietary fiber that may work as a prebiotic.
Bacterial diversity in cheeses
In the hay-aged semi-hard cheese, bacterial diversity increased nearly fourfold compared with the early stage of maturation. By the end of the ripening process, all three cheeses contained very little lactose. The researchers caution that any human health benefit would need to be confirmed through dedicated clinical trials.
