It is worth noting that it was previously difficult to access the province of Nuoro due to bad roads. However, locals have become accustomed to eating products that they grow themselves. Among the main ingredients in their diet are:

  • grapes, which are used to produce wine containing polyphenols that, according to Giuseppe Fornillo, contribute to their good health;
  • farro with zucchini, tomatoes, and capers;
  • grilled shrimp served with fresh high-quality olive oil and chili pepper.
