A Fresh Approach to Making Espresso

This method replaces traditional heating with ultrasound technology, allowing coffee to be made at room temperature in just three minutes while cutting energy consumption by up to 75%. A blind taste test involving 100 participants confirmed the quality of the resulting beverage.

How It Works

Instead of applying heat, the researchers harnessed mechanical energy. A metal transducer attached to a standard espresso machine's basket generates high-frequency sound waves. These vibrations create acoustic cavitation, where microscopic bubbles act like brushes, enhancing the extraction of flavor and aroma from the coffee grounds. While traditional cold brewing can take up to 24 hours, this new process completes in under three minutes.

Researcher Francisco Trujillo explained:

'We have developed what we call ultrasonic espresso: a room-temperature brewing process that uses high-frequency sound waves to extract flavor, oils, aroma, and caffeine from coffee grounds.' – Francisco Trujillo

He added: 'The result is an espresso-strength coffee made in less than three minutes, but it requires significantly less energy than the traditional method.'

The team adjusted the coffee-to-water ratio, used a finer grind, and set the ultrasonic exposure time to three minutes. In a blind test, consumers could not distinguish the new drink from traditional espresso in terms of aroma, taste, or bitterness. 'By using sound waves to agitate the coffee grounds, we achieved the same richness, body, and intensity, but with much less energy,' Trujillo noted.

This innovation promises not only to lower energy costs but also to simplify the espresso-making process, potentially marking a major step forward for the coffee industry.

The adoption of ultrasound technology in espresso preparation could have a profound impact on the coffee sector, as reduced energy use and faster brewing align with modern consumer demands for speed and efficiency.
