This jump is attributed to a decline in the reserves of high-quality potatoes held in storage and heightened demand from wholesale buyers. Since the start of the week, producer asking prices have ranged from 7 to 14 UAH per kilogram, depending on quality, variety, and lot size. Current prices are 17% higher than they were just a week ago, indicating a rapid escalation. The situation has been exacerbated because many farms sold their main potato stocks before the New Year, further depleting available supplies.

Wholesalers are reporting a shortage of good-quality potatoes. This scarcity is linked to problems with the quality of the 2025 harvest, which was affected by weather conditions during gathering. Persistent rains damaged the appearance of the tubers, adding another layer of complexity to the market situation.
