According to НВ — Техно: A study involving 615 participants has revealed a connection between frequent consumption of ultra-processed foods and increased fat deposits within thigh muscles among people at risk of developing knee osteoarthritis. The group included 275 men and 340 women, averaging 60 years of age with a mean body mass index of 27. Findings suggest that diets high in ultra-processed items correspond to greater intramuscular fat, which may undermine knee joint support and elevate osteoarthritis risk.
The Role of Ultra-Processed Foods in Diets
Data collected on participants’ dietary habits over the previous year showed that about 41% of their food intake consisted of ultra-processed products. This category encompassed:
- Sweetened beverages
- Ready-to-eat meals
- Packaged snacks
- Processed meats
- Sweets and candies
- Frozen pizzas
- Commercially produced bread
- Certain breakfast cereals
Researchers used magnetic resonance imaging (MRI) to assess the thigh muscle composition of the participants. Results showed that those with higher consumption of ultra-processed foods had significantly more fat infiltrated within their thigh muscles.
Importantly, the association between ultra-processed food intake and intramuscular fat remained strong even after adjusting for calorie intake, fat consumption, physical activity levels, and socio-demographic factors. Increased intramuscular fat can compromise muscle quality, thereby weakening the muscles that stabilize the knee joint. However, the study only identifies a correlation and does not establish a direct cause-and-effect relationship between ultra-processed food consumption, muscle fat accumulation, and knee osteoarthritis.
Further investigation is needed to clarify the underlying mechanisms. Researcher Zehra Akkaya emphasized this point, stating:
“Our findings highlight a potential link between diet quality and muscle health that isn’t always apparent when looking solely at body weight or calorie counts.”
This underscores the importance of making nutritious food choices to maintain overall health and potentially reduce disease risk.
The study highlights the need for mindful eating habits, particularly among older adults vulnerable to osteoarthritis.
