According to Главком: Ukrainian chef Yevhen Klopotenko has shared crucial advice for preserving food during prolonged electricity blackouts. His practical recommendations were published by 'Glavcom' and detailed in a post on his personal Instagram account.
Preserving Meat and Vegetables Without Refrigeration
For storing thawed meat, Klopotenko advises using a solution of water and 30 grams of salt. Chicken can be kept in this brine for two to three days.
"Salt is a natural preservative. Firstly, it will make the chicken denser and tastier, and secondly, this light salting buys us time. If we only have electricity for 4 hours a day, just salt it. It won't spoil; nothing will happen to it. It will just be salted for a few days, and then, when the power returns, you can cook it,"
the chef explained.
To preserve vegetables, Klopotenko recommends a mixture of hot water, vinegar, and salt. Vegetables submerged in this solution can be stored for at least three to four weeks.
"In terms of taste, it will be like fresh vegetables, but preserved thanks to hot water, vinegar, and salt,"
he emphasized. Klopotenko also noted that no one could have imagined facing winter without a reliable power supply.
Yevhen Klopotenko is a renowned Ukrainian restaurateur and chef, famous for his culinary projects. He recently presented borscht in Tokyo, Japan, prepared with ingredients grown on demined Ukrainian fields. It is also worth noting that Klopotenko is engaged to Kateryna Voskresenka.
